It all started when my husband bought some lamb at Costco…
He decided to make lamb burgers. I will post a recipe for those later, but I know that he himself grounded some lamb, added a bit of onion (we didn’t have a lot left), added bacon (!!!yum!!!), some kefta seasoning from our Try the World box, and then his compound butter on top when the burgers were ready. The seasoning really added the Mediterranean taste to the burgers!
We also somehow had Haloumi cheese in the fridge, and my husband actually grilled the cheese! This was the first time we were eating cheese this way, and it was amazing! Haloumi is just made to be grilled, I guess!
Apricots with ricotta cheese
I have made some apricots with ricotta cheese since we were eating something Mediterranean. I wanted to have something savory made out of apricots. I made it from memory, source unknown.
- apricot halves
- ricotta cheese
- chopped pistachios
- Halve your apricots.
- Dunk the halves into sugar to dust flesh side down.
- Broil for 3-4 minutes or until golden-brown.
- Spoon half a teaspoon of ricotta cheese on each half of apricots.
- Sprinkle chopped pistachios on top.
