So, continuing on my adventure with entering blueberry recipes, on Saturday we had a great lunch eating wild blueberry marinated flank steak with wild blueberry salsa!


Wild Blueberry Marinated Grilled Flank Steak
1 flank steak
1/2 cup of frozen wild blueberries, blended on pulse setting to break up
3 tablespoons of cognac
salt, pepper
1/2 red onion, sliced
3 cloves of garlic
2 tablespoons of sliced ginger
2 tablespoons of balsamic vinegar


Mix all the ingredients and put into a plastic bag to marinate overnight.


Wild Blueberry Salsa
1/2 cup of defrosted wild blueberries
1/2 red onion, sliced and diced
1 mango, cut into cubes
1/3 of a pineapple, cut into cubes
3 tablespoons of cilantro, chopped
2 tablespoons of meyer lemon juice


Chop all the ingredients, mix in a bowl.

Grill the flank steak to medium-rare.
Serve the steak with the salsa on the side for a terrific lunch!
