Miso Soup With Garlicky Lentils, Kale, and Mushrooms [Vegan]
This miso soup is such a quick dinner to throw together, it’s guaranteed to become a household favorite. It’s perfectly packed with protein, fiber, and secret hidden veggies. It’s extra-filling and extra satisfying, and particularly awesome to make a big batch to eat throughout the week. We’re all about not having to spend the whole week planning and re-planning food.
When you think about pancakes, would you have ever thought they could be like this? Stuffed with a creamy spinach pesto, they’re certainly unlike any other. They’re light and fluffy, but filling and delicious with a side of tofu scramble for breakfast or brunch. Not to mention, for something so fancy, they’re super-easy to make!
Simple method: In Dutch oven, brown pork over medium high heat in one teaspoon canola oil. Add liquid ingredients. Add all other ingredients except salt. Bring to a boil; reduce heat to simmer; cover and simmer for one and one half hours. Remove the bay leaves. Eat the soup!Suggestions: Rinsing the sauerkraut? It’s up to you. If you don’t rinse it, you might not need to add any salt. Richer soup? Many of the recipes call for added milk or cream. It’s up to you. I left it as is.Serving: Have sea salt and freshly ground pepper on the table. Some fresh green onions, dill, parsley or cilantro makes a terrific garnish. The soup tastes great with fresh French bread. Enjoy!
I think a huge veggie salad and an apple a day keep the doctor away, right?! This Chopped Detox Salad combines everything I love all in one. Lately, I’ve been leaning more towards recipes that are detoxifying and nourishing. It’s good to give your body a break from heavy meals sometimes, so I’m loving this salad at the moment. It’s filling too – which is important to me. I want to feel satisfied, not starved after eating a salad for a meal. A huge veggie-packed, plant-protein packed bowl will do the trick.
