Boy, have we been busy here! I don’t know where to start! Baby number 4 comes with not only breastfeeding problems, and keeping us awake at all days and hours, but also a basket of health concerns, so we are literally going back and forth the house and doctor appointments these past few weeks, this has not been an easy summer so far. With all of that going on, I am still entertaining, and happy to rely on delicious snacks and gluten free crackers I have found that I perfect for company, and keeping my children eating while we are away from the house.
One of the best things at any party for me is an opportunity to dunk my veggies into a delicious dip, spread an outstanding pate of sorts on crackers, and munch endlessly on appetizers, delicious cold cuts and marinated delights, either homemade or professionally pickled. Who needs the main course? The same is true when entertaining my kids, and keeping them happy through snack time without having to resort to the deep fried food. Not an easy task for picky eaters, but nevertheless doable if you have the right snacks ready.
With the level of busyness that we have been having since the baby was born I am glad I have stocked up on my snacks before the birth. I have picked up delicious Blue Diamond® Nut-Thins boxes, and now I am able to feed everyone through their snack time – no problem!
So many advantages of this snack option vs regular crackers we are used to getting. Nut-Thins are just perfectly crunchy, and do not crumble as you eat them with a delicious spread or stack them up. A sneaky way to eat your almonds with these crackers without the guilt. On top of all of the benefits of almonds, these crackers are also wheat and gluten free!
I have finally been able to make one of my most favorite spreads I love, I don’t make it very often, but it is always a crowd-pleaser and even my picky-eaters kids like it. Here is the recipe for you to try:
Feta cheese spread
Mince 2 cloves of garlic, 200 gr of walnuts. You can use a food processor adding the first two ingredients to 200 gr of butter, 400 gr of feta cheese and a few tablespoons of parsley. Enjoy!
Some recipes, when you make them, you just know you are making a crowd-pleaser. This cheese spread is so delicious I know if I ever own a restaurant, the spread is going on my menu, and I will probably end up serving it to my patrons as a starter course. It is just this good, I promise, and hope you get to try making it!
