Breakfast Cheesy Tortillas with Colman's Mustard!

This dish is great because it can be eaten any time of the day, takes just a few minutes to put together, and tastes like the best homemade dish you'll ever make!
  • 5 tortillas
  • 3 boiled eggs, de-shelled and minced
  • 1 cup of grated cheddar cheese
  • 3 strips of cooked bacon, crumbled
  • 3 tbsp. of sour cream
  • 1 tbsp. of dry Colman's Mustard
  • 1 tbsp. of water
  • sprigs of dill, tarragon, and a few tbsp of capers
  • because of the cheese and bacon in the dish, as well as the capers, I actually didn't add any salt to it, but you can add salt and pepper to taste
  1. Prepare Colman's Dry Mustard - mix ab even amount of water with dry mustard to dehydrate the mustard, mix to make it into liquid mustard. Let the mix stand for a few minutes.
  2. Mix minced boiled eggs, bacon crumbles, cheese, sour cream, then add your mustard mixture.
  3. Place a few tablespoons of mixture on each tortilla. Use a cake frosting spatula to spread the mixture evenly on the tortilla.
  4. Grill tortillas for about 5 minutes on high heat on a grill, or you can broil tortillas for about 3 minutes in your oven as well to get the tortillas crispy, and the cheese mix melting.
  5. Once the tortillas are crispy and the cheese has melted, take them off the heat, and add a few sprigs of dill, tarragon if you have it, as well as about a tsp amount of capers in the middle. Add desired amount to taste - it adds freshness and a salty element to the dish.
  6. Fold your tortillas, and enjoy!
