I have been experimenting with a new product this week, and came up with a delicious salad featuring Reese Hearts of Palm that I want to share today!
I am always looking into improving the flavor of my salads, and I like adding a combination of sweet and salty flavors to salads a lot – I think it gives an otherwise boring lettuce a lot of character, and this is a kind of a combination that cannot be possibly ruined – these are the quintessential flavors that are easy to understand and enjoy!
I tend to cook a lot of Mediterranean flavored dishes, and this dish by all means is going to be a part of my repertoire now in the kitchen.
The reason I love it so much is because it has these cornerstone flavors, a lot of texture, and the dish is so simple to put together at the same time it kind of makes you wondering why you would ever want to spend lots of money on that boring cafeteria style salad again?!?
So, what I was going for with this dish was creating a typical flavor combination that I love featuring something sweet, like some actual sugar, and fruit potentially, something salty, and what I usually use is a salty type of cheese, and/or pickles, olives, and then something tangy a bit as well, so balsamic vinegar is perfect here, as it accentuates the sugary notes in fruit, and at the same time adds that acidity to the salad that you need.
So, today I wanted to switch up my salty ingredient and I substituted it for a not so salty cheese, I used Scamorza cheese, and I added Reese Hearts of Palm. Have you tried hearts of palm yet? If you are not familiar with this ingredient, I hope you start using it in your salads and dips! I love cooking dips with artichoke hearts, and I can see how these hearts of palm will work perfectly in combination to add a bit of crunch to the dip – yum!
For the sugary element, I made maple syrup bacon bits by lathering some maple syrup in the middle of cooking bacon in the oven. I have then reused the grease and some extra maple syrup to caramelize some pecans for crunch and more sweetness, and I have also added fresh strawberries to the dressing.
It is nice to be able to feature only raw, freshest ingredients in recipes with seasonal ingredients, but more often when we cook, we just want to create a comfort dish that reflects our taste preferences, and makes us feel at home, even when we are getting a dish to go for our office lunch or snack. Salad with Hearts of Palm Recipe
- 2 cups of lettuce leaves, washed and torn up
- 2 tablespoons of shredded cheese (I used Scamorza, but you can substitute for feta or blue cheese if you like)
- 1 tablespoon of bacon bits (I caramelized my bacon with maple syrup)
- 1 tablespoon of green onions
- 1 tablespoon of pecans toasted in bacon fat and a teaspoon of maple syrup
- 2 tablespoons of Reese Hearts of Palm
- Dressing: 3:1 olive oil to balsamic vinegar, 5 strawberries, 3-4 leaves of fresh basil
- Layer the salad ingredients.
- Use a cocktail pestle to macerate the berries and the leaves, then mix the dressing
- Pour the dressing on the salad - enjoy!
- The way I cooked the bacon for this dish - I prefer using my baking oven when I cook bacon - I layer the bacon slices on a sheet covered with foil, and then put the bacon in the over to roast at 350 for 8 minutes. Once the first side is fairly crispy, I turn the bacon, and paint a layer of maple syrup on the cooked side, and then place the tray back in the over for another 8 minutes - this will be the best and the easiest bacon you will ever make!
