These past few weeks and days we have been eating very well at home. Three days ago I made homemade pasta two ways. I used a new program I have just joined called Salted TV for the recipe. The recipe worked out really well, and I had no trouble rolling the pasta with my pasta machine. We also had barbequed shrimp and pea braised pea shoots that evening – a very nice, delicious dinner.

I still have some carrots, lettuce, zucchini, purslane, sage, and scallions left to eat.

I think my plan for the next two days will be to have steak and grilled scallions, and to have some more baked chicken thighs to use us the meats that we have in the fridge. I will try to make some zucchini pasta with my new vegetable spiralizer as well. This recipe also comes from Salted TV, and is actually a Paleo diet recipe.

One other appetizer that I have been savoring this week is making simple olive oil with balsamic vinegar, and eating that with my homemade white bread. This is a dish to enjoy, and even die for. The vinegar is amazing quality, we usually don’t get to try this kind of vinegar due to costs. This vinegar is very good quality, has very rich, sweet flavor. I love its consistency, and I love the bottle that was sealed for freshness, as well as had a special no spill bottleneck insert that allowed to use just the right amount of vinegar without overspilling it. This vinegar is by Gourmet Living Balsamic Vinegar of Modena.

This company Gourmet Living has a website that is filled with great recipes to use with this vinegar. I am hoping to try some out in the next few weeks. I love the flavor of this balsamic vinegar – it is sweet and syrupy, perfect, just ow I like it!
