This week has been a little nerve-wracking, especially today, and I feel like getting a treat for myself and for my family – we deserve this. I love shopping at Albertsons because this store makes me really feel like I am a part of their family. The pitfall for me was the glaze. This was the first time I was trying out this glaze recipe, and I wanted to just make it my way, so I didn’t wait for the glaze to actually set, so it definitely dripped all over. I did not despair though, and managed to save the cake by decorating it pretty on top, so even if you don’t manage to get a perfectly mirror-like glaze, I promise, no one will notice! Just throw on it a bunch of delicious candy, your family and guests will be floored!
Glazed Ricotta Chocolate Coconut Cake Recipe for Holidays – Celebrate With O Organics from Albertsons
Recipe Type: Dessert
This is a decadent dessert made with ricotta, chocolate and shredded coconut. The flavor is superb however one piece is quite enough for one person, so be sure to invite lots of guests when you whip this one up – enjoy!
O Organics Butter – 300 gr
O Organics chocolate chips – 300 gr
8 eggs (3 for the chocolate layer, and 2 for the ricotta layer)
O Organics sugar – 300 gr (200 gr for the chocolate layer, and 100 gr for the ricotta layer)
O Organics flour – 200 gr
Baking powder – 1 tsp
a pinch of salt
O Organics Ricotta cheese – 800 gr
a dash of vanilla
O Organics shredded coconut – 60 gr
2 cups of O Organics butter
1 tsp of vanilla
a pinch of salt
2 TBSP of heavy cream
4 cups of confectioners sugar
Heavy cream – 80 ml
O Organics Sugar – 215 gr
Cocoa powder – 60 gr
O Organics Chocolate chips – 70 gr
water – 100 ml
gelatin – 12 gr dissolved in 65 ml of water
You will be making two layers of cake.
Layer 1 – Chocolate
Melt down butter and chocolate chips.
Beat together eggs and sugar
Add melted butter and chocolate chips to eggs and sugar.
Mix together flour, baking powder, salt. Add the dry ingredients to the wet ingredients. When you are adding the dry ingredients, be sure to sift them through a sieve.
Layer 2 – Ricotta
Mix ricotta cheese with egg, vanilla, sugar.
Add shredded coconut.
Layer the cakes either like a marble cake or like a zebra cake – this is to taste.
This proportion will give you two separate cakes that you will use as layers for your final product.
Prepare the frosting. Blend all of the ingredients in a mixer until they are combined into frosting.
Apply frosting on your cake.
Prepare the glaze.
Mix cream, sugar, cocoa powder, chocolate chips on the stove in a pot until melted. Add previously soaked gelatin. Push the mix through a sieve to get rid of any lumps.
Make sure that you only apply the glaze when it is of a pliable consistency, and is not hot and liquid. Cover the cake top with glaze either just on the sides of the cake, or for the whole top.
Decorate the cake with chocolates, shredded coconut.

There are so many options that Ling Ling brand offers to try at home, and all of these dinner dishes taste incredible. I am not kidding when I say this – the flavors are outstanding, and actually much better tasting than from your corner takeout restaurant. The dishes that we have been enjoying the most are Ling Ling Noodles and Yakiniku Beef. We pick these up at a local Walmart when we do our bi-weekly shopping trips, and it couldn’t be easier now to pull off an Asian themed dinner.
I think I am never going to be able to stop eating Ling Ling Frozen Entrees, they are so addictive. It is one of those brands that you will keep going back looking for in stores, knowing that you are guaranteed to have an outstanding meal. We are now going to have a regular Asian food day or two for dinner options, and instead of having to go out for that, we can just cozy up at home making a satisfying bowl of food quickly.
The options for different dinners that Ling Ling offers are almost endless, and they encompass dishes and recipes from different Asian cuisines of Japan, China, Korea and Thailand. Some of the dishes include:
There are also Asian Entrees, Ling Ling Noodles and Dumplings that you can choose from – two noodle varieties of Chicken Yakisoba and Drunken Noodles with Chicken and two dumpling varieties of Chicken Dumplings in Chili Sauce and Pork Dumplings in Chili Sauce.
I am not sure why exactly these dishes taste so good, I can’t figure it out. There are a few exceptions to my rule of eating everything fresh and homemade, and it’s these entrees. The flavors are made perfectly, there is this marriage of flavor and taste there going on, that is so intoxicating that when you get a bowl of this food, you will not be able to put it down until you finish it, and you will want to go for extras. I love eating leftovers, but to my sadness, whenever I cook Ling Ling Entrees, despite the cooking dish gets completely full with food, there are never any leftovers because my family just can’t get enough of this food.
One of the secrets of Ling Ling entrees is their Infusion Cooking Method that works its magic to infuse flavors of delicious Ling Ling signature sauces into each bite of food. It is really incredible how far the technology of cooking frozen entrees have come because now the flavor of a frozen entree is indistinguishable and often better than home cooking or a restaurant specialty!
Here is a recipe I made last week with some seasonal acorn squash I had on hand – it turned out so delicious! The amazing thing is that this dish has about 4 ingredients+salt, pepper. It is amazing how many steps I have managed to avoid having to do by using a Ling Long frozen entree here. Instead of a long shopping list, you only need 4 things for this recipe! I don’t know that many recipes that are that satisfying to eat, and that easy to make at the same time! Hope you enjoy this one!
This is my delicious take on a stuffed squash recipe using Ling Ling Fried Rice Frozen Entree. A usually a bit intimidating dish of stuffing something and requiring many different steps to completion has been made simple by adding a Ling Ling Fried Rice Frozen Entree. You can experiment with different entrees to your taste!
1 package of Ling Ling Fried Rice Frozen Entree (I have used my favorite Yakiniku Beef)
2 acorn squashes
1 cup of grated cheddar cheese
salt/pepper to taste
a dollop of butter
Clean up your squash by removing the seeds inside it, thoroughly washing it.
Put salt and pepper on the squash, add a bit of butter.
Bake the squash in the oven at 350 degrees for about 50 minutes. Check periodically to see if you need to adjust the time.
While the squash is being baked, prepare Ling Ling Fried Rice Frozen Entree as per package directions.
When the squash is ready, stuff the squash with your prepared rice, and top it up with cheddar cheese.
Broil on high for 5-10 minutes. Make sure that the cheese melts but doesn't start burning.
I am glad to tell you that you can taste these entrees now as well, and I strongly encourage you to try them (maybe I shouldn’t do that, then if you live near me you will buy all in the store nearby and I won’t see any on the shelves when I need it!) and I know for a fact that you will be hooked! We all like to eat out, and going to an Asian restaurant is always a welcome event for my family. We love Asian food, and Asian American fusion food, and always prefer to eat at a professional kitchen because we generally cook more European and American style cuisine at home, we just don’t have a lot of knowledge of Asian cooking, and are still learning. However, eating out is becoming more and more difficult for us every year, as our family keeps growing, and we just don’t have the finances or the time to go out that much any more.
So, a natural progression for me was creating a dinner at home that would remind me of the best restaurant experience that I can re-create.
This was not a particularly fancy or greatly prepared meal that would take hours to make, practically the whole day. This was just a regular weeknight dinner at home, however, I think I will remember it for a long time, the food was just so good.
I am greatly influenced by Korean culture. I am a complete Korean drama junkie, and can binge watch hours and hours of this stuff. I have become quite a savant in Korean pop culture, and also a great fan of their food, particularly barbecue, and the flavors that they enjoy eating. I also find that the way they prepare beef makes beef very tender and easy to eat without necessarily cooking it for a long time, even for tougher cuts. I decided to marinate beef short ribs in a Korean style marinade. I still used my favorite ingredients in the marinade like brown sugar and balsamic vinegar, but I also added a pear that I had to tenderize the meat properly in the marinade, and add that sweet notes to it. I also used a fairly large amount of soy sauce, lots of garlic and ginger.
Continuing the fruity theme I wanted to create a refreshing salad that would cleanse the palate and add that fresh note to the meal. I made a pear salad with cashews, tomato, cilantro, pickled ginger and red onion.
Together with this meal I served a special Ling Ling Yakiniku Beef Fried Rice dish that I picked up from Walmart a few days ago. I often get frozen entrees at Walmart to make quick and easy meals, and I am never disappointed. However, this particular entree really added that authentic taste to our dinner.
I have to admit that I don’t know a thing about making a proper fried rice dish. My best attempt at it is throwing together a day old rice with a handful of frozen vegetables and soy sauce, and calling it a day. I know this is not even close to the correct flavor. Ling Ling Fried Rice – Yakiniku Beef had so many delicious ingredients, I never have this many on hand, at this perfect flavor benchmark.
I know why some people don’t buy frozen entrees very much. They freeze their own meals when they cook ahead, but those meals defrosted never taste the same. They are flavorless, and are not really there for food enjoyment. The difference between a homemade frozen meal and a meal bought at a store that was frozen is striking, and not in the favor of the homemade variety. Ling Ling uses infusion cooking method where each grain of rice or noodle for noodle meals is infused with the special Ling Ling signature sauce to make the flavor outstanding. When you are cooking a Ling Ling entree at home from frozen, you will never know it was a frozen meal, it tastes so good. The flavor experience feels like you are actually in a restaurant, it is that good.

I am glad that I can find these Frozen Fried Rice dishes at Walmart where I frequently shop. There are several varieties available there, so I will be trying them with my family often now. So far we have tried Yakiniku Beef, and we are really hooked! I wanted to make this Dr Pepper Mole Sauce because I think it is actually perfect for parties – it can be served warm or even room temperature over any favorite protein, either with rice, or on a tortilla, with salad, beans, or any type of side that you may have – it is so versatile. This is the first time I made this Dr Pepper Mole Sauce, and I had my reservations. I was planning to just make it for my husband, as he is usually the one who orders mole, and I just wanted to try a bit of it.
