The pitfall for me was the glaze. This was the first time I was trying out this glaze recipe, and I wanted to just make it my way, so I didn’t wait for the glaze to actually set, so it definitely dripped all over. I did not despair though, and managed to save the cake by decorating it pretty on top, so even if you don’t manage to get a perfectly mirror-like glaze, I promise, no one will notice! Just throw on it a bunch of delicious candy, your family and guests will be floored!

Glazed Ricotta Chocolate Coconut Cake Recipe for Holidays – Celebrate With O Organics from Albertsons

Recipe Type: Dessert

This is a decadent dessert made with ricotta, chocolate and shredded coconut. The flavor is superb however one piece is quite enough for one person, so be sure to invite lots of guests when you whip this one up – enjoy!

Ingredients

  • Cake:
  • O Organics Butter – 300 gr
  • O Organics chocolate chips – 300 gr
  • 8 eggs (3 for the chocolate layer, and 2 for the ricotta layer)
  • O Organics sugar – 300 gr (200 gr for the chocolate layer, and 100 gr for the ricotta layer)
  • O Organics flour – 200 gr
  • Baking powder – 1 tsp
  • a pinch of salt
  • O Organics Ricotta cheese – 800 gr
  • a dash of vanilla
  • O Organics shredded coconut – 60 gr
  • Vanilla frosting
  • 2 cups of O Organics butter
  • 1 tsp of vanilla
  • a pinch of salt
  • 2 TBSP of heavy cream
  • 4 cups of confectioners sugar
  • Chocolate glaze
  • Heavy cream – 80 ml
  • O Organics Sugar – 215 gr
  • Cocoa powder – 60 gr
  • O Organics Chocolate chips – 70 gr
  • water – 100 ml
  • gelatin – 12 gr dissolved in 65 ml of water

Instructions

  1. You will be making two layers of cake.
  2. Layer 1 – Chocolate
  3. Melt down butter and chocolate chips.
  4. Beat together eggs and sugar
  5. Add melted butter and chocolate chips to eggs and sugar.
  6. Mix together flour, baking powder, salt. Add the dry ingredients to the wet ingredients. When you are adding the dry ingredients, be sure to sift them through a sieve.
  7. Layer 2 – Ricotta
  8. Mix ricotta cheese with egg, vanilla, sugar.
  9. Add shredded coconut.
  10. Layer the cakes either like a marble cake or like a zebra cake – this is to taste.
  11. This proportion will give you two separate cakes that you will use as layers for your final product.
  12. Prepare the frosting. Blend all of the ingredients in a mixer until they are combined into frosting.
  13. Apply frosting on your cake.
  14. Prepare the glaze.
  15. Mix cream, sugar, cocoa powder, chocolate chips on the stove in a pot until melted. Add previously soaked gelatin. Push the mix through a sieve to get rid of any lumps.
  16. Make sure that you only apply the glaze when it is of a pliable consistency, and is not hot and liquid. Cover the cake top with glaze either just on the sides of the cake, or for the whole top.
  17. Decorate the cake with chocolates, shredded coconut.
  18. Enjoy!
