I have recently read a post about modern food trends, and it is so interesting that today, even though we are now so cultured in fusion cuisines, know all terms of French professional cooking from watching cooking shows, and have access to world class chefs in practically any small town that anyone is allowed to test, can possibly afford, American cooking is as traditional as it has always been - recipes are changing just to make them faster to put together, and the simpler the dish is, the more chances there are you will be able to cook it, and then eat it.
