This is a puff pastry pizza recipe we “invented” on a lazy weekend. We love baking homemade pizzas on weekends, but sometimes we simply can’t seem to have enough energy, after a busy week. We’re also Greek and of course love a traditional Greek salad. So the simplest solution was to put our favorite salad ingredients on top of puff pastry…creating the “Greek Salad” pizza! This pizza is fresh and quick and it’s perfect for a light and healthy meal. But it’s not one of those pizzas that leave you unsatisfied in terms of taste. It’s delicious and filling, making it the perfect choice for kids as well! Since we used only vegetables and cheese and avoided any cured meats, this is also a vegetarian dish you can enjoy without any guilt. It’s low in calories and rich in taste! This recipe is actually one of the simplest, fastest you can use. Just grab your favorite puff pastry dough (you can also use any pizza dough as well if you prefer a more traditional pizza), add the wonderful Mediterranean toppings and simply put it in the oven! For this pizza we used some yellow classic mozzarella as the base, to create a wonderful layer between the crust and the toppings which will prevent the moisture from reaching down to the dough. On top of the cheese, we added all the ingredients of an authentic (Horiatiki) Greek salad; except cucumbers. We added tomatoes, green bell pepper, onion, Kalamata olives, dry oregano, sea salt, good quality feta, and extra virgin olive oil. For this recipe, we prefer to use cherry tomatoes (even though an authentic Greek salad has always wedges of regular tomatoes). We enjoy how those little tomatoes look and taste on our pizza. And we avoided using cucumbers as we didn’t want the moisture they bring, plus they wouldn’t add much to a pizza taste-wise. We also used yellow onion instead of the classic red one, because it tastes better cooked. The result is a golden fluffy crust with a fresh cheesy taste, full of aroma from the pepper and the oregano. Drizzle with some extra olive oil and serve!
